Growing up, I remember my mom always made scalloped potatoes and ham for family dinners. When I got married, I made it every month because it was so easy and fast to make. It is a wonderful comfort meal and warms you in the winter.

  1. Melt butter in a microwave-safe bowl.
  2. Blend in flour and seasonings.
  3. Gradually stir in milk.
  4. Microwave on high for 4 minuites. Stir and microwave for another 4 minuites. It should be nice and creamy at this point.
  5. While your mixture is microwaving, peel and slice your potatoes. You will want them thin so that they cook thoroughly.
  6. In a 2-quart casserole dish, layer potatoes, onions, and sauce. Repeat layers.
  7. Cover with plastic wrap and put to vent holes in the top.
  8. Microwave on High for 19 minuites.
  9. Seve with Ham and a veggatable of your choice.
